Vollrath Mirage Pro 59500P
Vollrath is a long-established foodservice brand, and the Mirage Pro is its countertop workhorse. With 100 power levels, I could dial the stock to a bare shiver and it stayed there all day.
My verdict
My verdict: Buy it if you need a tough, NSF-listed burner for long simmers on a regular outlet. Skip it if you need to sear above 400°F.
My test results
6 quarts boiled in 19 minutes and 30 seconds; 8-hour simmer was rock steady.

My notes
Vollrath is a long-established foodservice brand, and the Mirage Pro is its countertop workhorse. With 100 power levels, I could dial the stock to a bare shiver and it stayed there all day. Owners praise the build and overnight simmers; a few report control faults, so register the warranty.
Its top temperature is 400°F, lower than some home burners, which matters only for very hot searing.
