How to choose an induction cooktop
Start with where it goes. A built-in cooktop drops into a counter cutout, usually 24, 30 or 36 inches wide, and needs a dedicated 240-volt circuit. A portable cooktop sits on the counter and plugs into a regular outlet, which makes it the easy way to try induction before you remodel.
Then check three things: your pans (a magnet should stick firmly to the base; see the magnet test), your power (see electrical requirements), and how many pans you cook with at once. After that, the differences that matter are simmer control, a bridge zone for a griddle, and touch controls versus knobs. My best induction cooktops guide ranks the ones I’d buy.
